GARNISH: Parsley and grated lemon rind
Spread onion and carrot in the bottom of a baking dish.
Arrange the lamb shanks on top of the vegetables.
Add the tomatoes, jalapeno's and a sprinkling of herbs to the baking dish. Cover the dish with a lid or with foil.
Bake at 325o F for 2 - 2½ hours, until very tender.
Garnish with the parsley and lemon rind.
Serve with: Mashed potatoes, and colorful vegetables.
