Ingredients

Lamb Patties

  • 1 lb Atkins Ranch Ancestral Blend Ground Lamb
  • 4 Tbsp finely chopped fresh rosemary
  • 4 Tbsp finely chopped fresh oregano
  • 2 minced garlic cloves
  • 1/4 cup finely diced onion
  • 1 tsp Kosher or sea salt
  • 1 egg yolk
  • 2 Tbsp breadcrumbs
  • 1 tsp extra virgin olive oil

Dill Greek Yogurt Sauce

  • 6 oz plain Greek yogurt
  • 3 Tbsp fresh dill
  • 2 tsp lemon juice

Serve With

  • 1 thinly sliced cucumber
  • 12 to 16 mini pitas (or quartered full sized pitas)

Method

    1. Combine lamb, rosemary, oregano, garlic, onion, salt, egg yolk, breadcrumbs, and 1 teaspoon olive oil in large bowl. Mix well.
    2. Form mixture into 12 to 16 thin patties.
    3. Place patties in air fryer basket, taking care not to overlap. Depending on size of patties and basket, you may have to cook in batches.
    4. Air fry at 400°F for 5 to 7 minutes, flipping at halfway, to desired doneness.
    5. Combine Greek yogurt, dill, and lemon juice in small bowl. Mix well.
    6. Cut a slit in each pita. Layer dill sauce, lamb patty and cucumber in pita and serve.
